This delicious healthy recipe is courtesy of Australian Mangoes and marks the start of the mango season. It's a delightful blend of flavours and textures and is delicious on it's own or with char-grilled chicken or fish.
Ingredients
50 grams quinoa
3 mangos
100 grams mesclun
2 avocados
20 grams pepitas
10 grams sunflower seeds
10 grams shredded coconut
5 grams sesame seed
5 grams chia seeds
50 ml red wine vinegar
½ tsp dijon mustard
1 pinch sea salt
1 pinch peppercorns

Wash the raw quinoa well under cold running water and strain. To cook, sprinkle into a pot of vigorously boiling water and boil for 20 minutes - you can tell when it's ready as the outer ring separates. Strain and rinse under running water until cool. Makes 4 servings
