Free Healthy Recipe - Beetroot with chicken mango and feta cups

Gluten free, Low carbohydrate, Low fat, Low GI, Low sugar, Wheat Free

This popular recipe from The Greengrocer's Diet. The pickled beetroot can be made in advance and added to sandwiches and salads.

Ingredients
4 serves pickled beetroot, see accompanying recipe
300 grams chicken, cooked and shredded
1 mango peeled and diced
½ tsp plum vinegar, available from health food shops
120 grams soft feta
30 grams walnuts, dry roasted

Method

Make the beetroot in advance

Using the lettuce leaves like cups, fill each cup with beetroot, shredded chicken, and mango.
Drizzle with olive oil and vinegar and season with pepper.
Top with feta and walnuts and serve straight away.
