these scrumptious summer treats are courtesy of Australian Summer Stonefruit
1 tbs chia seeds
2 tbs coconut water
250 grams raw almonds
4 apricots laved and stones removed
½ tsp vanilla bean paste
1 orange zest only
1 tsp cinnamon
1/3 cup desiccated coconut
½ cup desiccated coconut, for rolling

1. Place chia seeds and coconut water in a small bowl and soak for 15 minutes.
