This cooling soup is from the summer section of The Greengrocer's Diet. Served chilled it will help your internal body temperature drop.
4 vine ripened tomatoes seeds removed
2 red capsicum seeded and roughly chopped
½ green capsicum seeded and roughly chopped
1 red chilli seeded and chopped
1 Lebanese cucumber roughly chopped
1 clove garlic, peeled and roughly chopped
2 slices wholemeal sourdough, crusts removed and roughly chopped
1 cup passata
2 tsp umeboshi vinegar
2 tbs parsley, chopped

Place all of the ingredients except the parsley in a blender and process until completely smooth. Transfer to a large jug or bowl and refrigerate for at least 2 hours. Serve chilled in bowls and sprinkle with parsley.
